Peruvian Grilled Chicken (pollo a la brasa)

When I saw this recipe, I’ll be honest and admit I wasn’t sure exactly what Peruvian food entailed. Latin American, yes, but each country always has its own influence, its own specialty and its own regional cuisine. After my two weeks in Italy, I learned that even two regions in the same country are rarely alike.

So when I saw lime, cumin, paprika – I nodded my head. Sure, those all made sense. But then I saw soy sauce….huh? Apparently there are many large Japanese and Chinese communities in Peru, and hence they have influenced the cuisine. Seemed like an odd combination so I thought I would try it out.

I don’t know if it was the 24 hours in marinade, the slow cooking on the grill (you leave it on longer on the side without a burner on) or the flavorful combination of ingredients, but it is amazing! Very juicy, great taste, and a perfect, easy grilling meal. I served it with some Spanish beans and it made for an easy weeknight dinner (just don’t forget to throw it in the marinade the day before).

PERUVIAN GRILLED CHICKEN

Makes 2-4 servings

1/3 cup soy sauce
2 tablespoons fresh lime juice
5 garlic cloves
2 teaspoons ground cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
1 tablespoon vegetable oil
1 whole chicken (about 3 1/2 pounds), quartered (or a package of chicken thighs, like I used)
Accompaniment: lime wedges

Marinate chicken:
Blend soy sauce, lime juice, garlic, cumin, paprika, oregano, 1/2 teaspoon pepper, and oil in a blender.

Put chicken in a large sealable bag and add marinade. Seal bag and marinate, chilled, 8 to 24 hours.

Grill chicken:
If using a charcoal grill, open vents on bottom and lid of grill. Light a large chimney starter full of charcoal (preferably hardwood). When coals are lit, dump them out along opposite sides of bottom rack, leaving a space free of coals (the size of the quartered chicken) in middle. When you can hold your hand 5 inches above the grill rack directly over coals for 3 to 4 seconds, coals will be medium-hot.

If using a gas grill, preheat all burners on high, then reduce heat to medium-high.

Discard marinade, then pat chicken dry. Oil grill rack, then grill chicken over area with no coals (or over a turned-off burner), skin side down first, covered, turning over once, until cooked through, 30 to 35 minutes (add charcoal to maintain heat).

Pork Tonkatsu

I will admit this dish might have been my first attempt at Japanese food. It isn’t that I don’t love Japanese food because I really do, I just never seem to find many recipes, and when I do they seem a bit intimidating.

But this Japanese classic looked easy enough. Apparently, pork tonkatsu is incredibly common in Japanese cuisine – it consists of any type of pork that is dredged and then coated in Panko. Many people serve it with a Japanese Worcestershire sauce that includes pureed apples, mustard and soy. This recipe calls for making your own sauce, which gives the dish a rich and tangy flavor. It tastes like a Japanese BBQ sauce and would probably be fantastic used in other ways (glazing chicken, etc.).

This recipe comes from Food & Wine. I recommend serving it with rice and steamed spinach (with a little soy).

PORK TONKATSU
Serves 4

1/4 cup ketchup
1/4 cup apple butter or applesauce
1 tablespoon Worcestershire sauce
1 tablespoon low-sodium soy sauce
1 teaspoon Dijon mustard
1 teaspoon unseasoned rice vinegar
1/4 cup all-purpose flour
2 egg whites, beaten
1 cup panko (Japanese bread crumbs)
Two 8-ounce pork tenderloins, cut into 2-inch pieces and pounded 1/2 inch thick
Salt
1/4 cup canola oil
Steamed rice and steamed spinach, for serving

In a saucepan, bring the ketchup, apple butter, Worcestershire, soy, mustard and vinegar to a simmer; transfer to 4 bowls. Cool.

Put the flour, egg whites and panko in 3 separate shallow bowls. Season the pork cutlets with salt, then dredge in the flour, tapping off the excess. Dip the cutlets in the egg white, followed by the panko, pressing the crumbs to help them adhere.

In a large skillet, heat 2 tablespoons of the oil. Add the cutlets and cook over moderate heat until golden brown, about 5 minutes. Brush the remaining 2 tablespoons of oil on the cutlets. Flip and cook until golden and cooked through, about 5 minutes longer. Transfer the tonkatsu to a work surface and cut into strips. Transfer to plates and serve with rice, spinach and the dipping sauce (either serve dipping sauce in small bowls, or pour over the pork like I did).
